I want to take out a home equity loan on a home I bought before I got married. They said that my wife needs to sign even though she's not on the title and hasn't worked. Why?

Texas is a community property state. Because you are married, she owns whatever you own and vice versa. She is implied to be on the title, based on these laws, and has to give her consent to the transaction.
