  • I know many different rubs but here's one to get you started. All Purpose Rub 3/4 cup paprika 1/4 cup ground black pepper 1/4 cup salt, kosher or sea slat 1/4 cup sugar (brown or white) 2 TBS chili powder 2 TBS garlic powder 2 TBS onion powder 2 tsp cayenne Store in a jar in the dark and cool place.
  • I like to go with a classic 8-3-3 rule. 8 parts sugar (half brown, half cane), 3 parts salt (kosher), and 3 parts spice (I like to use a clove of minced garlic, lots of ground cumin, paprika,and a healthy dose of ground chipotle). I use it on tofu and fake meat products (vegetarian here). Rub it, rest it, and warm smoke it with hickory.
