  • When freezing meats the cold air is circulating in the freezer. When you thaw meat on a counter the air is fairly still. If you use running water you can thaw meat much more quickly and more safely than the old counter-top thaw. If you are talking about thawing in the fridge, you are still circulating cold air on the meat. BTW your health department will tell you to never thaw meat on the counter! If you need it fast use running water or the microwave. If you do use the microwave make sure that you cook the food right away. Some of the meat may have been brought to dangerous temperatures by the microwave.
