Here's what I noticed about ALL the previous answers: Those chefs are TV personalities. For those of us who were in the business before the TV craze of the past 40 years, two names stand-out "head and shoulders" above all: Brillat-Savarin Auguste Escoffier I won't tell you who those gentlemen were. I'll leave that up to those who are curious enough to find-out for themselves. AND THE FIRST TV chef - the lady who started it all - as we know the TV-chef: Julia Child Thanks for asking your Q! Australia has some great chefs. Tetsuya is probably known as the most innovative. Jacque Reymond has a wonderful restaurant in Melbourne. Neil Perry is internationally reknown. Tobie from Fifteen, Jamie Oliver's restaurant in Melbourne is famous in his own right. We also have Guy Grossi; a Melbourne institution. These are the real chef heroes. The TV ones are celebrities and put on a good show, but, most of them are not hands on very day.
