    Any part that usually yields a steak. Skirt steak is probably not a good choice because it usually cut across the muscle fibers, instead of parallel to them

    It can come from all sorts of parts. It can be whole muscle meat or even ground up and mashed together smaller pieces s they do commercially sometimes. Any meat can be made into jerky. You can even jerk fish:-)
