It is their built in defense system. Animals will not come along and eat them if they are going to get a mouthful of thorns. Of course the thorns don't protect them from insects, only larger herbivores.

To remind us that, "just because something is beautyful dosent mean it can't, or won't hurt us." It also makes it harder for animals to eat them.
