What is the difference (in practice) between pre-Christianity Paganism and the modern day style of worship?

Honestly, we don't know. We have very little information about pre-Christian European religious practices because Christians tended to burn the information as "demonic". We know the myths, the holidays, and bits and pieces here and there, but not much about daily worship. It's also important to note that we are talking about many diverse groups: Celts, danes, franks, gauls, etc. and their beliefs, although similar, were not the same.
