South Africa was the last country to gain independence from a colonial power (UK) on 31 May 1910. [Added in response to bobthebuilder] You're right. That should have read that South Africa gained complete independence in 1994, when it finally attained black majority rule. The independence in 1910 was independence from a colonial power, but it was still descendants of white immigrants who ruled the country for nearly 90 years more.

The last country that gained independence was Eritrea in 1993. It separated from Ethiopia.
