The other answer gives you the perspective from the US side. It should also be noted that defaulting on a loan falls under civil, not criminal law, so you can be sued for the amount at any time.

Where are you going to "flee" to? Canada may not require Americans to hold a passport to enter, but almost every other country does. You will not be able work legally in whatever country you go to, so unless you get a kick out of panhandling, for example, at the corner of Portage and Main at -30C in winter, you would have few sources of income. You would not have access to any resources or benefits that citizens enjoy in the country you move to, so you could very well find yourself living on the street in very short order. You would be an illegal immigrant and you would be deported on discovery and your name would be added to a list of unwelcome foreigners. You don't qualify as a refugee, so there would be chance of admission on those grounds. Unless you have connections in the country you go to that can supply you with forged documents for the new country, you would be in some difficulty. Depending on forged documentation is unreliable, as many illegal immigrants can testify.

I lived on the road for a brief period earlier in my life and I can assure you that it can be a whole pile of no fun.

Leaving the US does not eliminate the loan obligation. It just limit's it's enforcement. Tax forms must still be filed when outside the US even if you do not owe taxes. You also need to renew your passport periodically. The real question is what will you lose by avoiding the loan repayment and what will be the consequences later on if you decide to return or retire in the US. There is no statute of limitations on student loans.
