It doesn't take much "learning" when someone is out to kill you and anyone else that gets in his way. She's a close friend of Harry's and directly helps to thwart his plans.

Hermione winces at the name because she is a mud blood and knew from the begining it would be hard to fit in right away. So she studied like she always does and learned about he-who-must-not-be-named. After reading all that stuff I don't blame her for being just as scared of his name as Ron. And if you look closely at the books Hermione knows more about Voldemort than Ron or Harry.

I know, it doesn't make sense. That kind of fear is not something you can read out of a book. The only thing I can think of is, if people believed that by saying his name aloud, he'd be alerted to them and would pay them an unwelcome visit. In that case she might have avoided the name for the same reason.

Since Hermoine was Muggle-born it was her attempt at "fitting in" completely in the wizarding world. Throughout the series she tries her hardest to be the best witch by studying constantly and practicing her wand skills. Wincing at Voldemort is a product of what is it to being a "true wizard" in her eyes.
