One of my favorite simple meals is just grilled chicken breast and some steamed broccoli. If you need more that than, "bake" a potato in the microwave (takes about 8-10 minutes) and then you've got a whole healthy meal in less than 20 minutes. Other things I really enjoy are chicken stir-fry (just slice up all your veggies and cook them in a non-stick pan. Add some stir-fry sauce, soy sauce, etc and you're set. Serve it with some rice.) and chili (I make mine with ground turkey, and lots of beans. good with cornbread, rice, or even tortilla chips.)
