Skin of hand-> nerves of hand/arm-> spinal cord-> muscles of arm. Something like that. It doesn't get as far as the brain until AFTER the reflex action (pulling away) has taken place. The spinal cord takes care of "oh shit, that's hot, save the hand!" for you.
