ooh, i just love to make homemade mash potato. You can have anything with this! fish fingers, topped with cheese, beans, mixed beans, frozen food, frozen veg, meat...

I make my mash by boiling a couple of smallish potatoes untill they are soft (usually about 10-20 minutes) take them out the pan and add a bit of milk and mash them up... then add a knob of butter, and grated cheese (i also like mixed herbs and a pinch of salt) and mix it all up! eat it quick though as it goes cold fast - and its not nice then :P

Also, find your favourite premade sandwich (in a packet) and check the ingredients. Buy the obvious things from the supermarket and make your own! I looove homemade egg sandwiches with cress, lettuce, a pinch of pepper and mayo!

also, PIZZA is great! you can easily buy a cheese and tomato base... and the fun part is adding toppings! you can make them as healthy and yummy as you want!
The best things to use i find are:
green/red/yellow peppers, MORE cheese, tomato, sweetcorn, onion, tuna, chicken, mushrooms...

ohhh, the fun you can have.

Make sure you get a student cookbook! they're designed to be simple one person meals :)

    Roasted Salmon with Spicy Cauliflower

    Pre-heat oven to 450 degrees.

    1 head of cauliflower
    2-3 cloves of garlic
2-3 Tbsp anchovy paste (or you could use anchovy's, we don't but you totally could)
    1/2 tsp red pepper flakes
    3 Tbsp olive oil
    salt and pepper

and of course, 2 salmon fillets - or however many you want to cook.

    - Cut the cauliflower in large florets. Wash/Rinse and let drain.
    - Grate or mince the garlic
    - Mix remaining ingredients (excluding salmon) and garlic in a bowl, making a loose paste
    - Put cauliflower in a large bowl, pour paste over it, and toss several times to coat
    - Place on baking sheet and put in pre-heated oven for 10 minutes
    - Take out of oven, turn and move cauliflower to edge of baking sheet, and place salmon fillets in middle of sheet
    - Season salmon fillets with salt and pepper and place 2 lemon slices on each (optional - you know, in case you don't like flavor!)
    - Put in oven for 8-10 minutes or until salmon is cooked to your liking

    Kielbasa turkey sausage
    Zuchinni
    Yellow or red peppers
    Olive Oil
    Garlic Salt
    Brown Rice

In a large pan, coat the bottom with olive oil. Slice the turkey sauage and vegetables, add to the pan. Add garlic salt and cover. Stir occasionally until vegetables are done. Add more garlic salt to taste. Serve over brown rice.

    Egg Lemon Soup

    1/2 cup brown rice
    ~ 4-5 cups water
    2-3 eggs
    1-2 lemons

Put the rice in the water. Let the water boil, turn it down. Let the rice cook.

Beat the lemon juice & eggs together.

When the rice is cooked, add a little bit of the water from the rice to the egg/lemon mixture & mix it in quickly. The idea here is to get the egg mixture to roughly the same temperature so it doesn't separate when you add it in.

Add the mixture in, stirring constantly as you add it. If you're worried about raw eggs, you can let it simmer for a bit longer, but keep stirring it. Add a little bit of salt if you want.

It's great with paprika. You can sub in veggie broth or chicken broth (or even stock) for some/all of the water.

    Ever tried a smothered steak?

Here's what I like to do:

Take 2 portebello mushroom caps and slice them into strips about 1/4" wide. Sautee them in a skillet with a diced onion and 2 cloves of garlic. While that's sauteeing, take a family-sized package of tenderized round, trim it (it usually has membranes in it that are kinda tough), salt and pepper it, and dredge it in a flour you've also seasoned with salt and pepper. Put it in a lasagna pan large enough for it to all fit in one layer, pour your sauteed vegetables over it. Prepare a brown gravy mix according to package directions (but don't cook it), and pour the mixture in the meat. Bake it until the meat is fully cooked.

Goes well with steamed or baked potato, buscuits (especially if you sop the biscuits in the juices left in the pan you baked the meat in!!), green beans, and/or spinach.

    Sketchy Mess Jeoffory

Buy some boneless chicken breast or tenderloins and brown them in a pan.

Prepare a mixture of boil-in-bag rice and cream of mushroom soup. 1 bag to 1 can.

    Add chicken and enjoy.

It goes well with any side vegetable and you can put it in a tupperware bowl and eat off of it for two or three days.

Buy yourself a medium size crock pot. They are priceless! Its great for just about anything, chili, chicken, meatloaf type things. I even use mine for cooking dried beans. (The only things than NEVER work for me is noodles or rice)

Great recipe: Put whole chicken, a cup or so of broth, carrots, celery, potato. in crock pot. Add salt, pepper , oregano, a clove ot two of garlic. Cook on low for 6 hours or till juices run clear.

Dinner #1 enjoy what you made

After dinner remove most the meat off the bones, save the leftovers for lunch and dinner tomorrow nite (chicken saled etc)
After dinner I put the carcuss BACK in the crock pot. Add enough water to cover and about 1 tsp vinegar. Add a few more veggies, and a bay leaf. I turn it back on low all night. In the morning strain all the bones etc. You then have stock only, put it in the fridge to cool

Dinner #2 Chicken Soup .Heat stock add leftover chicken more fresh veggies ,and noodles ( another yummy simple soup..is stock, 1/2 package of spinach and some tortalini)

The stock can also be used in place of water when making rice.

Good cookbooks are invaluable as well..Try this one out
by Racheal Ray..lots of ideas and most of her ingredients are health based, not just "open this can"
