  • it's due to the pectin in apples absorbing your saliva... i don't know a whole lot about it, but as a recording engineer i'll have people eat some apples before i record them singing as to make their sibilance (s type sounds) and plosives (p type sounds) less harsh. works well!
  • Apple contain chemicals that are highly volatile. These chemicals also tend to bond with any available water that is present. You can imagine that in your mouth there is a lot of available water. Different apple variteies will have differing levels of these volatile compounds and I would think that if you ate red apples rather than green ones this effect would be less for you. Note that the chemicals in the apple are naturally present and the apple would be tasteless without them.
