  • Cheese Straws 8 oz. butter, chilled 1 lb cheddar cheese, shredded 2 cups flour 1 tsp. salt 1/2 tsp. ground red pepper or cayenne Maybe a few drops of water if necessary Put the flour and spices in food processor. Cut in by quick pulses, the butter with the flour till combined. Remove from FP and place in a bow. Add cheese and knead together by hand adding drops of water if needed to get it all together. You can now refrigerate it for up to two days well wrapped. Preheat your oven to 450°. WHen you want to bake them, roll them out until about1/4 inch thick. Cut into strips about 1/2 inch wide. Place on parchment paper or well greased cookie sheet pan. If you want you can give them twists to make fancier bread sticks. BAke for 5-8 minutes until lightly golden. Best served hot or warm. Marinated Shrimp 4 TBS. olive oil 2 TBS. white wine vinegar 1/2 tsp salt 2/3 cups mayo 1 TBS anchovy paste 2 TBS spicy mustard 1 LB. large shrimp, cooked with tails still on. 3-4 scallions 1/2 jalapeno pepper sliced, no seeds 2 TBS fresh parsley 1 TBS. lemon juice with some zest Combine everything and chill over night in the refrigerator. Serve cold the next day.
  • Chicken Strippies 1 cup breadcrumbs 1/2 cup Parmesan cheese 2 tsp dried thyme 2 tsp dried basil 1 tsp. dried oregano 1/2 tsp salt 1/2 tsp garlic powder 1/4 tsp cayenne 8 boneless chicken breast halves, cut them in 1/2 inch wide strips, 3-4 inches long 1/2 cup melted butter dipping sauces Preheat oven 400°. In a flat bowl or tray combine breadcrumbs, Parmesan cheese, and spices. Dip the chicken strips in melted butter and then dredge them in the breadcrumbs. Place them on a greased cookie sheet. Bake 20 minutes or until chicken is done. Serve hot with marinara sauce or with honey mustard and bleu cheese dressing.
