As my brother wrote, the Sun, Moon, and stars are used to symbolically represent the three degrees of glory that we may obtain after the final judgement. As such, they have sometimes been used as exterior decorations on our temples. However, I would not call them key symbols. They are not mentioned at all in the temple ceremonies except in the context of God having created them along with everything else. Likewise, we don't even revere them as holy symbols. (They don't have the significance to us that the various forms of the cross have to mainstream Christianity.) So, the Sun, Moon, and stars are not a significant symbol to us beyond their usefulness in expressing differences in potential glory.

Although it is common to think of the symbolism of the kingdoms of heaven, it is not correct. The symbolism of the sun, moon and stars comes from Revelation 12:1 "And there appeared a great wonder in heaven; a woman clothed with the sun, and the moon under her feet, and upon her head a crown of twelve stars:" This fits more with the way the symbols are presented on the temple, with the stars at the top, and the moonstones at the bottom and the sunstones in between.

not so much inside the temple but outside of it yes, in the 1800's suns moons and stars were clearly understood as symbols representing the things of heaven.
