They were able to incorporate Jannisaries which were usually young boys taken from conquered or administrated lands such as the Balkans and trained them in their army at a young age. These Turks were able to set up a fairly successful system of administration of regions administrated by Begs who could be replaced more or less like a governor instead of using kings or feudal feifdoms. The Ottomans were also well versed in (modern warfare) at their age and they eployed all the latest methods as well, they were not beyond using all the available strategies of diplomacy ranging from spies to deceitful double dealing with rival nation states. Would you want to be found rotting in a Turkish prison? I could go on and on but this is good for now.

Because they had high culture, high technology and high morals. These three when combined, makes you a world power. If you lose any one of these aspects, than you start to decline and eventually fall. It's the rule of our world and it can not be changed.
