The chicken is previously cooked in a marinade of yogurt, malt vinegar, spices (including allspice, black pepper, cinnamon, cloves, nutmeg, fenugreek, ginger, and cardamon), and olive oil. Some recipes also include tahini and/or lemon juice in the marinade.
  • Kim's answer is a good one. Let me just add that shawarma is similar to the Greek gyro, which is perhaps more common in the USA. But the thing that sets authentic shawarma apart from its cousins is that you use very thin slices (shavings, almost) of meat.
