There is a small air pocket in the large end of the egg. When the egg is fresh, the pocket is only about 1/8th of an inch deep and as large around as a dime. As the egg ages, however, it loses both moisture and carbon dioxide — shrinking — so that the size of the air space increases. And the size of the air space determines the buoyancy of the egg. So if you submerge a very fresh egg in water, it will lie on the bottom. An egg that is a week or so old will lie on the bottom but bob slightly. An egg that is three weeks or so old will balance on its small end, with the large end reaching for the sky. And a bad egg will float.

  • Answer Two--seeing if it floats--is likeliest to be correct. If an egg doesn't spin well that just means it's raw--if it spins well, it's been boiled. The "expiration date" doesn't mean it's spoiled, just that the quality isn't as good--the white spreads out thin and far instead of standing up close to the yoke. By the way, the darker an egg yolk is, the more nutrients there are in it.

  • do you mean as in Fertile(sp?) there is a technique called candeling just google it in and something should pop up about it I haven't done it myself, so I'm not sure exactly how its done.
  • According to Paula Deen: to determine whether an egg is fresh or not, place the uncracked egg in a glass of water. If it sinks to the bottom, it's fresh. If it floats, throw it out! That came straight out of my Lady & Sons country cookbook.
  • The floating eggs may be perfectly OK. If you put a new laid egg into a refrigerator, the air inside it will contract. Because the shell is porous, other air will be drawn into the semi-vacuum so created. It will now probably float. Crack open any floating eggs and see if they look and smell OK. That's how our ancestors managed to survive.

  • Sure. If the egg floats cook it and eat it. If you get sick then you won't be stupid to do that again.
  • Put the egg in cold water and if it sinks then it is bad. If it floats it's good. Still make sure however when you crack the "good" egg open to always smell it just to double check.
