Argentine is interesting; a lot of Italian influence. Peruvian is also good; it's a mixture of Spanish, indigenous and Chinese cuisine, (etc?).

Arroz con Pollo (Chicken with Rice, a traditional dish in Puerto Rico) It is red rice mixed with chicken, red peppers and spices.

I love carne guisada, it's like a great beef stew with potatoes, cilantro, olives stuffed with pimientos, chiles. Very nice! And arroz con gandules, a type of rice dish, very flavorful.

Potaje Canario and papas arrugadas with salsas mojos are both specialities of the Canary Islands.

ropas viejas, the Cubano sandwich (well, that may be more Hispanic American, unfortunately I don't know that much about Cuban culture), Empanadas (I had some at a horno on the side of the road in Chile - I have been trying to replicate that at home for years), eel and anything on offer at an Argentine asado. There were some great Brazilian dishes I had once, but the names escaped me (might have been because of the wine...).

I had Argentinian meat empanadas! they were pretty good, my teacher made them for a few of us, he's native to Argentina.
