Most vegetable grading is done by size and weight of the vegetable. For size, rollers or belts spaced apart just so allow some vegetables to fall through while others go over the gaps. This process can be used to both sort out vegetables that are too small or too big. To sort by weight, one way is to use a vacuum. The vacuum sucks up with a certain force and will lift vegetables off of a belt onto a higher belt. This is effective for sorting vegetables by weight and density, or for removing other things from the harvest. Sometimes computer "eyes" are also used to sort for color. When the eye sees something that is the wrong color, it kicks it off the belt.
Besides that, a large about of grading is done by a person with a trained eye.
