Call me a perv, but I like steaks well-done (no pink). Restaurants can't seem to get it right for me and I often get a steak that I would consider medium at best. One time I kept sending it back until the chef came out and yelled at me "I'm not going to ruin good meat!" What's it to him? It's my steak and I should have it done the way I like. To me, any steak rare is sickening. I think cooking it well brings out the meaty flavors and if the steak is a good cut, having it well-done shouldn't make it tough. I used to like the Ponderosa restaurant because they could cook it well and it was still tender, but they are out of business now (at least in my area).

Medium rare with perfect char marks from the charcoal grill, with a baker and sour cream.

I hate pink meat. And I will make a fuss. I even did it in France once. The chef finally came out and said "But madamoiselle, that is not how we cook it here in France". To which I replied, "But it is I who want to eat it, and I don't like it rare." Very culturally insensitive, I know, but it was my food. I was paying for it. I should be able to enjoy it, which I wouldn't if it were red inside. (I speak 4 languages and understand another 6 so I am not normally so brash, but all I wanted was a cooked steak!)

Very well done.
