  • 5-4-2017 Carrots contain pro-vitamin A, which is orange. It is contained in the cells, which are rather tough, so you have chop, cook, or chew a lot to open the cells and release the pro-vitamin. That's why the skin color is not heard of very often. Vitamin A is toxic if you get too much, but pro-vitamin A is converted to vitamin A only if you need it so it is quite safe.

  • That was on one of the few episodes of House I saw! Its true vit.A from carrots is safe while vit.A from polar bear liver can cause poisoning.
