I have seen them crisp up, so perhaps your oil is not hot enough, or you are cutting them too thick (they are very high in water content).

There is too much sugar in it,and it would turn to mush or caramelize under heat.Ordinary potatoes have more starch and can be fried.

I've gotten them to crisp up quite well by frying them twice like proper fries. First cool oil fried, then let them sit and get cold. Then raise the heat and fry again.
