I would cook them. ALthough dog's stomachs are stronger than ours, they can still get upset. Raw chicken, particularly the more it has been processed, is a hive for all sorts of bacterial infections.

In all honesty I would not feed my dogs sausage at all they might have onion and other harmful things in it. Best thing is just plain chicken or meat with out seasonings. boil it and feed.

I wouldn't feed sausages to dogs because of all the other things in there but not because you have to cook it. We feed only raw to our dogs. They love their chicken/turkey necks and backs but they are never cooked. Cooking bones changes them to splintery dangerous things. Dogs are made to eat all sorts of things. They have the capacity to digest bacteria and every sort of icky thing in raw meat, just like wild dogs and wolves do. They never ate cooked food, they never ate grains. Dogs do not have the enzymes to process grains so why do they put them in dog food??? And most dogs seem to be allergic to soy and corn and wheat. OOps, sorry to go on and on about this. But most raw things are fine. Just don't feed onions, raisins, garlic, or chocolate.
