Probably lipids - in laymans terms fat and grease exuded from the meat. Its also the same stuff that clogs up the arteries and kills thousands of people each year of heart problems.

If its cheap bacon it is the salt water that it in your bacon it turns a white milky mess when fried.

Thats the good stuff :-) Dip your bread in it for a great bacon sandwich.

That's just another reason why I don't eat the stuff. It's old fashioned artery clogging fat.
