I eat it with. I mix the wasabi in with the soy sauce, though the etiquette of this is questionable (it's generally accepted but some people think its a faux pas).

Only the fish should be dipped in soy sauce. Never dip "sweet" sushi rolls in soy sauce.

I like sushi and sashimi with lots of wasabi mixed with just a bit of soy to break it down a bit. Dip the fish in the wasabi, NOT the rice.

Most times with soy sauce and if the shop offers it, with special sashimi soy sauce. Some shops tell you to eat certain sushi with salt. Here's some trivia for you. Soy sauce is also called "Murasaki".
