  • Depends on the cake. A regular layer cake, well covered, like in a cake dome, can last for 3-5 days in the refrigerator. SOme that have fresh fruit or whipped cream are very perishable and can barely make it past the first day. A cheesecake can last 5-6 days easy. SOme cakes, like fruitcakes and quick breads can last longer than a week when well wrapped and with alcohol soak.

  • Depends upon the kind of cake. If I need to keep a cake longer than a day or so, I freeze it. First, cut it into individual pieces. That way, every time you want a piece of cake, just take it out and defrost that one piece.
