How would you prepare hamburgers from ground beef (scratch)? Any tips/methods/recipes? Thanks.

    A lot of good, effective methods posted already. I would only suggest if you're using a lean beef, put a little grated onion in the mix. This will help keep the meat from drying out while cooking.

    I add 1 packet of instant onion soup mix and some crushed crackers to the ground beef then mix it up by hand and make it into patties.

    So many good ideas already! Here's the only thing I can add to all the great ideas: Mix a packet of dry ranch dressing into a pound of ground beef.

    The simpler the better. I cut up an onion finely, and begin by frying it a little in oil, before putting in the hand-moulded patties. The meat absorbs the onion's flavouring through the oil. It really doesn't need anything else. Just pile up the lettuce,tomato and all the other fresh ingredients on top of it, with some tomato sauce (ketchup) or bbq sauce and that is the perfect meal.

    Take the beef, mold it into patties. I make my patties fairly thick because I like my burgers medium and very juicy, but you can make them whatever shape/thickness you want.

    I don't add anything to the meat itself before molding it, because I think that interferes with the juiciness of the burger and also alters the cooking time.

    Sprinkle each side of the burgers with a little montreal steak seasoning, or just some salt and pepper and place them on the heat source. You don't want the grill/stove TOO hot or your burgers will burn on the outside and be raw on the inside. About 350 degrees is a good temp for cooking beef.

    Once you have the burgers on the heat, DON'T TOUCH THEM. Don't smoosh them down, and don't flip them or move them around in the pan/grill. For a medium burger, you need to cook it about 8 minutes on each side. Serve on your favorite bread (I put mine on a salad 'cause I don't eat bread) with your favorite condiments/cheese/veggies. Enjoy!

    i recently tried just plain ground beef with some garlic and parsley (finely chopped) and salt and pepper... make a patty press it real thin and stick it in the freezer 10-15 minutes take it out and on a pan fry it up. i like to add cheddar and to the toasted bun 1000 island dressing some lettuce and tomatoe and i have one of my favorite in'n out burgers!

    Take lean Ground beef (The leaner the better).

    Add to that Worcestershire Sauce (Shake the bottle a couple three times) A tad of salt, A bit of pepper, some finely diced onion, one egg and about a handful or so of bread crumbs, Half a handful of minute rice, an a dash of rolled oats.

    Mix well, knead, and divide into balls, depress the balls into patties (Cruel names and thoughtless words work best to depress the HB - hands form the patties ;) )

    In a preheated skillet set at medium low heat or pan toss the patties, allow to cook covered for oh about 15 minutes) flip and repeat covered - Then turn up the heat to medium high uncover and allow to cook an additional (about) 5 minutes on either side, until you get a little crispy brown.

    On the grill BBQ as you would otherwise do.

    I rarely if ever use straight Hamburger, I add lots of other stuff. My Meat Balls sometimes include finely diced green peppers, my burrito meat includes a bit of finely diced jalapeños. I've been known to toss in shredded carrot, potato, tomato - lots of interesting veg.

    It's best to grind your own meat, chuck to be precise. If you don't have a gridner you can still do a pretty good job with 1" cubes of chuck dropped into a food processor. Don't squeeze your meat too hard but shpae it into very thin patties but big around, add blue cheese or other cheeses in the middle and add another patty on top. Press the edges together. Salt and pepper the meat and grill or pan fry.

    Or caramelize a lot of sliced onions. LEt cool. Grate some swiss cheese. MIx ground beef with onions, cheese and some prepared mustard. Form into patties gently and grill these. These are tasty!!!!
