"Funny" is so subject to individual taste. Best to just scout around and see what you like.
Starting with the most popular writers is a good idea:

Because it is a wiki, other users may have "unimproved" some of the authors' works through additions of their own. However, if the article appears to be vandalized, that's easy to fix. Each featured article has a little Star icon that will let you view the "final" featured/published version. That's usually your best chance at reading something funny.

Uncyclopedia is funny, but it is quite dirty humor. I find AAAAAAAAA! quite funny, and also Google, Food, Alaska, Nobody, Nobody cares, All Your Base Are Belong To Us, and Russian reversal.
It's all very un-funny haha ...ha
I did find some humor in the Cup Stacking article.
However a good portion of the articles are lame and it seems people are trying way too hard to be funny = not funny.
Got a few chuckles out of the marijuana article - I really hope no one takes it seriously. It reminded me of the hilarious Reefer Madness movie: "The hard street drug Marijuana," and "its catastrophic effects." hahaha I just read the article again and found another nod at the reefer madness movie:
"When harvested, the leaves are generally removed from the stems (although some exceptions are known) and ground up to enable easier transportation."
I really haven't found anything on there that gave me a good laugh. There's always South Park for that though (still the only show I laugh out loud at).
I haven't found anything funny about that site. I think it is hurtful and disrespectful. The humor always comes at others expense and I don't like that kind of humor. If both parties can't laugh at something, I don't think it's truly funny

It's a bit weird isn't it - I can understand the user editability on Wikipedia, because the ultimate goal is a balanced, factual, unbiased article, but on Uncyclopedia anyone can edit your article, and if the ultimate goal is humour, which is entirely subjective, it shouldn't work.
But sometimes it does.
