    Loaded with cheddar and chives.
    I like to use them big and long Idaho varieties.
    It is mandatory for it to be cooked with the skins on.

    Try this one. Slice a russet potato not quite thru in about 1/4 inch slices. Put a tomato slice in between in potato slice. Put in tin foil and sprinkle with chopped green onion or chives, sprinkle with italian seasoning, a few good dollops of butter, salt and pepper. Close up foil and bake.
