The bull’s eye is the eye of the target. It means literally the bull’s eye, sweet and also round.

Early on, when hunting instruments were crude and easily damaged and difficult to make, one-shot kills were not just a luxury. To make an absolute kill one could place an arrow or similar weapon into the eye socket of a large animal. This would easily enter into the brain and dropping the animal where it stood. To practice this, targets were sometimes painted with an eye of a bull, (the male of the species being hunted).
