I'm a big George Clooney fan as he can play a wide range of roles in a lot of the movies I have seen him in. He has that charismatic flair that one seldom sees even in celebrities. For lack of a better choice that comes to mind I will say Halle Berry because she has played also a diverse range of roles and she always gives a wonderful and believable performance. She also has a a screen presence which is also not common amongst celebrities.

Russell Crowe can play nearly any role and be convincing. It's harder to pick a female, because I think of too many who have been challenged by many very different roles. I think Scarlett Johannson is very good Christina Ricci is excellent. Reese Witherspoon. Renee Zellweger.

terrance howard is an amazing actor. the first two rolls that come to mind are pimp turned rapper (hustle and flow)and tv director (crash)
