I make my own sausage and I love it. Modern grocery store babies are way too squeamish about the origin of their food. I've seen a chicken get it's head cut off and run around our backyard before it died and we then went through the process of pulling the feathers off. While I'm on the subject, have you ever wondered what cosmetics are made of? You'd be amazed.

We make most of our own sausage or buyvery good sausage. Nothing wrong with using up all the bits and pieces. Makes for lots of flavor. Our favorite sausage to make is venison or rabbit with cilantro. Excellent!
