I think it is because of a hormonal change which causes the hair root/hair follicle shape to change. This is also what happens when a child with straight hair hits adolescense and suddenly develops curly hair.

I agree. My grey hairs are a different texture than my brown ones. Also, when I was pregnant, my hair texture changed temporarily. It became kind of coarse, whereas it's ordinarily fine and smooth. I think hormone are probably responsible for a whole lot of the crazy, weird things that happen to our bodies.
