  • By using a fan in the open air you have successfully both dried out your ginger and covering it with all the bacteria in the air over that period of time. Since it is now dry, the bacteria should not live and breed on the ginger. I would ensure to cook it properly when using it in food, but you should be OK. I would not suggest drying in an oven as the heat will leach out the volatile components that make up the flavour of the ginger. All dry herbs are air dried and covered in bacteria (this is why some people want to irradiate herbs).
