Simple carbs are things that are very easy for your body to break down into energy or transform into fat. Some examples are refined sugars, white flour, the starches in a potato (not sweet potatoes/yams generally). Complex carbs take more time and energy for your body to break down, whole grains, those present in most vegetables (specific definition of a vegie is a root, stem or leaf, everything else is either a nut or a fruit) excluding potatoes. There are more compounds present in a complex carb ,more molecular connections etc.
