convenience, laziness over healthy.
Habit.
Real cream takes a bit of preparation. And it goes bad all too quickly.
Fake items or substitute items generally are cheaper, involve less effort, or are supposed to be better for you in some way. Cool whip has been around over 40 years. At the time of its introduction, there were still a lot of people around who remembered making whipped cream from a hand-whisk. The product's appeal grew as the public became sold away from dairy fat. Same for coffee creamers, which evolved away from cream into "half and half" and eventually to non-dairy.
In the case of Cool Whip, the taste and consistency is very different. I personally prefer actual whipped cream, but my grandma always used Cool Whip because she liked the way it tasted and "behaved".
People who use non-dairy creamers might be lactose intolerant. Or, like my grandma and Cool Whip, they might just prefer the taste for whatever reason. My mom uses Coffee Mate instead of cream, but I don't know why.
