    Baby and lacy Swiss cheese are semi-soft cheeses with a greater moisture content than cheddar cheese, so they will mold faster than cheddar. They keep in a refrigerator for five to seven days. The famous Swiss cheese with holes, emmentaler, is a hard cheese and should mold at the same rate as cheddar.
