what kind of fish? Fresh fish is the first key, sounds like you got that one. rinse the fillet off with cold water season to taste and away you go.

Garlic usually helps, try pan frying it in butter with fresh garlic or garlic powder and a little salt and pepper.

The fish needs to be as fresh as possible. To refreshen fish, do what the Chinese do. Place it in a dish with cold water and some salt. Soak the fish for 5-10 minutes. eat the fish right away. fresh fish shouldn't smell that "fishy". washing it well and also marinating it helps.. my gran chops up garlic and parsley. also after washing it you could soak it in milk and then get some bread crumbs and italian seasonings and "empanar". dip first in flour then beaten egg and then the italian seasoning and then deep fry in hot olive... yummy sprinkle lemon juice over and voila! you have adobo which is really yummy.
