0 - it wasn't real !! I know, I know, that's not a very good answer.. let's try again. The "Technical Book of Science Fiction Films" states that the Death Star had a population of 31,622,963 -- (however, according to this site http://www.theforce.net/swtc/ds/population.html this number isn't very accurate.) -- so, since it has been blown up twice, and the second one was bigger than the first, let's make a rough estimate of 75,000,000 people. But remember, it was a long time ago in a galaxy far, far away... so, I'm not sure if anyone truly knows the answer...

All of these numbers are unrealistically small. Well, its all unrealistic, but anyway, just for fun... The modern crew compliment of a Nimitz class aircraft carrier is around 3200. If you calculate a CVN's rough volume you can find a population density of around .0000858 people/square foot. If you multiply this by the volume of the death star (I used a 160 km radius) then you get a crew compliment of almost 52 trillion people.
