The same way as "extra soggy" ones are made. The "tots", (and exactly which part of the tater is the tot anyway?) are just coated with a sugar solution. In the oven , micro or macro, the sugar crystallizes and gets crispy. Some "extra crispy" brands of tots and fries have strange protrusions, some don't. It's a scam.What all "extra crispies" have in common is the sugar coating. Compare the ingredients with a package of "regular."
