Start with a microwave safe bowl, where you will whisk together 1 cup of white sugar and three eggs until smooth and a ribbon-like consistency is achieved. Next stir in 1 cup of reconstituted lemon juice, three zested lemons, and ½ cup unsalted butter. Cook in the microwave for one minute at a time, until the lemon curd is thick enough to coat the back of a spoon. Caution bowl may be hot. Remove from microwave. Sprinkle with cinnamon if you desire. Next pour into small dessert bowls and refrigerate until ready to eat.Microwave Lemon Curd
