Celery contains some strong odorants, notably 3-n-butyl phthalide. The plant may have evolved to produce this strong juice as a way to repel insects. Research has recently been conducted to investigate whether this substance can reduce or prevent tumors or help with high blood pressure. If it shows positive results, maybe it's worth stinking up the fridge in order to keep the stuff around!
