    Meringue powder is a dried product made of pasteurized eggs. It has a shelf life of up to two years if it is kept dry, and not contaminated with other ingredients. While it likely won't make you sick if used beyond the two-year mark, it will not be as easy to make the frothy peaks that characterize meringue.
