If you whack someone on the head, do they become unconscious like in the movies? If so, just how hard do you have to whack them to knock them out?

Knocking someone out in real life is a lot harder than it is in movies. As I understand it, part of being able to knock someone out from a blow to the head has to do with where you hit them. Also, if you actually hit someone hard enough to knock them out, you're also essentially hitting them hard enough to potentially cause concussion, skull fracture, brain hemorrhage, and even death. Quick rule of thumb: nothing in the movies is real.
