Why do wineries give you crackers when you sample their wines?

    It's to cleanse your palate. In other words, it is to make sure your tongue has a fresh start so you can taste the new wine without interference from last one you tried.

    Crackers and bread have a neutral flavour, which is beneficial when tasting wine. Buyers usually cleanse their palate (as stated by the other poster) with something that has a neutral flavour. If you are selling wine, you may want to provide something that will enhance the flavour of the wine. Cheese, for example.

    Buying = neutral, selling = enhancing.
