Everything tastes better in chocolate. Popular for its ease of use, almond bark is an imitation chocolate commonly used as a substitute when dipping foods or making candy. Almond bark, also called confectionery or summer coating, is an artificial chocolate. Almond bark has a chocolate flavor but is made primarily from vegetable fats instead of cocoa butter. Almond bark is easy to use--remove from the package and melt. It can be melted in the microwave, in a saucepan over low heat or in a double boiler. The vegetable fats in almond bark make it easier to handle and quicker to set up than real chocolate. Candies made with almond bark also have a higher melting temperature and are not as sensitive to humidity. Available in white, milk and dark varieties, almond bark is sold in large blocks or packages of flat disks or chips. Almond bark can be found in most grocery stores and at candy supply shops. Almond bark is commonly used with candy molds or for dipping candies, berries, nuts, pretzels, dried fruit and other foods. Never mix almond bark with real chocolate. The fats in the two products are not compatible and will leave candy discolored and unattractive.Definition
