The ideal way to can tomatoes is with a pressure canner, but it is possible to do so effectively and safely without such a fancy piece of equipment. By observing some simple cautions, you and your family can enjoy tomatoes long after growing season has ended. Clean the tomatoes thoroughly. Wash them carefully and under running water, removing dirt or chemical residue. Boil a pot of water and keep another pot of cold water close by. Dip the tomatoes into the boiling water for one minute before immediately dipping them into the cold water. The shock of moving from hot to cold will loosen the skins so they slide off easily. Use a paring knife to cut out the cores. Your freshly skinned and cored tomatoes are now ready for the jar. Add tomatoes into a pint jar, packing them in until they are about a half-inch inch from the top. Add 2 tsp. of lemon juice to the jar. This raises the level of acidity and helps to make the water bath method safer. Place new canning lids on the top of the jars and screw jar rings on tightly to hold the lid in place. Using a large canning pot, boil enough water so when you place the jars in the water on top of a cooking rack in the bottom of the pot. the jars are not touching each other and are completely covered for at least 45 minutes. Using a jar lifter to avoid injury to yourself and to the jars, pull them out of the water and set them down in a cool place but not drafty spot on the counter where they can remain undisturbed for 24 hours. As they cool, the temperature inside of the jars will change the pressure and the button in the center of the jar lids will depress (usually with a pop). After 24 hours, any jars that have not sealed properly can be reboiled or simply used right away. The sealed ones are ready to store.
