• Most raw and under-cooked pork is infected with trichinosis. All cooks know this. Google "raw pork trichinosis" (omit the quotes).

  Here's a site called "Ask the Meatman" with more info on trichinosis. Eating raw meat, esp. pork and wild game, is just asking for trouble.

• I should have said "knowingly allow infected pork to be sold".
  
  I would have to dispute the suggestion that most raw pork is infected, proper processing, handling, and feeding limit infections. Never the less proper cooking of pork products is obviously a safety precaution.
